Yellowfin Tuna Burgers

If you're anything like me, you crave BURGERS!!!  But I have a rule that I rarely break... I only eat red meat once or twice a month.  Don't get me wrong, because I luuuuuurve red meat like a monkey likes bananas!  

Try this Yellowfin Tuna Burger!  Y'all it is soooo yummy!  And you can use previously frozen tuna which might be a little easier on the wallet.  



I was wingin' this recipe.  But here's what I did... 

Yellowfin Tuna Burgers

2 Yellowfin tuna steaks (4 oz. each - you don't need a lot) 
1/3 white onion finely chopped
2 cloves garlic minced 
zest of 1 lemon
4 tbsp. parsley 
3/4 cup panko bread crumbs 
1 egg
salt and pepper

Marinade to mix together and pour into tuna mixture

1 lemon juiced
squirt Dijon mustard 
3 tbsp. olive oil 
I LIKE IT HOT....SO I ADDED ...
2 tbsp. sambol olek  (Asian hot sauce) 
salt and pepper 

Chop the tuna finely.  DO NOT PUT INTO FOOD PROCESSOR.  It breaks it down too much.  Just use your knife.  

Chop onion, garlic, parsley finely and put into a bowl with the tuna.  Add the panko, lemon zest, and egg along with salt and pepper to taste.  



Put the lemon juice, olive oil, sambol olek (you can use cayenne pepper), squirt of Dijon mustard, salt and pepper.  Shakey shake!  Then add 3 tbsp. of this to your tuna mixture. 

If it's too dry, add more marinade.  If it's too wet, add more panko bread crumbs.  

Form into burgers!  



Bake 10 minutes at 425!  DONE!!!  



Time to eat a burger!!!
