Find Out How FBP Got His Name...



When I met my fiance, he told me he played bass in 4 different metal and hard core punk bands.  I thought, "oooooh my! The two kinds of music I don't listen to...this is going to be interesting".  And trust me,  there has neven been a dull moment! 

I started going to see my sweet FBP play at his metal shows, and I would post pictures of him on Facebook.  But I knew that my family, friends, and fans would be a little shocked.  I started calling him my "Favorite Bass Player" on Facebook and said I was on a Nashville Rock Tour.  Nashville is where we met by the way.  

I still refer to him as my FBP, but I'm not sure that I've ever posted any videos of him playing bass.  Let me warn you, this is not for the faint of heart.  This music is definitely NOT country!  HA! 

But I luuuuuurve my fiance, and I love seeing him do what he loves!  This picture was taken of us right before he played a show last night at The Vera Project.  



My FBP just moved to Seattle a year ago this month, and he already is playing in a new band that he loves.  They call themselves Witch Ripper, and YES I have the t-shirt!  HA!  Oh, and they just got their first write up in The Stranger!

Candy Corn Punch



Only a few days left to milk the Candy Corn thing!  Can you believe Halloween is Thursday?  Where does the time go?  I love this idea for a Halloween party or for a treat for the kids before they go Trick or Treating.  This is so simple, only requires a few ingredients, and you can make them in seconds!  What mom doesn't love that?!

Candy Corn Punch 


Ingredients 
  • Ice
  • 1/3 part Crush orange soda
  • 1/3 part yellow Gatorade
  • 1/3 part zero calorie lemonade Vitamin Water
 
Directions:
  1. Fill your cup/pitcher/whatever you are using up to the very top with ice.
  2. Pour the orange soda in first until you've filled about 1/3 of your glass.
  3. Next, slowly pour the Gatorade directly on top of the ice and let it trickle down on top of the orange soda until it fills 2/3 of your glass.
  4. Finally, slowly pour the lemonade on top of the ice and let it trickle down on top of the Gatorade. 
*Note: Take care not to stir this drink or it won't work.

Shepherd's Pie (Cottage Pie)


Some say this is the ultimate comfort food.  When my FBP asked me to make this for dinner, I immediately thought of my hips.  You know the old saying, "if you're gonna eat that sister, you might as well tape it to your hips"?  Yeah, that's the first thing that went through my head.  BUT I also knew I  been good all week,  and this would be the first time in over 7 days I would be preparing red meat.  And honestly, what is soooooo bad about potatoes?  They are actually really good for you.  Yes, the reasoning had officially set in.  So I found 97% fat free ground beef, and I enjoyed every last morsel of this rib sticking meal!  



I call this dish Shepherd's Pie but after researching it, I discovered that the English refer to this as Cottage Pie if it is made with beef.  In order to be an official Shepherd's Pie, it needs to be prepared with ground lamb.  But I'm not English.  I'm just a good ol' southern girl from Arkansas, and we've always called this Shepherd's Pie.  So I'm stickin' with that!  

Dontcha' just wanna take a big ol' bite?!! 



Shepherd's Pie 

For the potatoes: 


1 1/2 lbs of russet potatoes
1/4 cup half and half 
2 oz. unsalted butter
3/4 tsp. salt
1/4 pepper
1 egg yolk 

Meat filling:

1 lb. 97% fat free ground beef 
2 tbsp. canola oil
1 cup chopped onion
2 carrots peeled and diced small
4 cloves garlic 
1 tsp. salt
1/2 tsp. pepper
2 tbsp. all purpose flour
2 tsp. tomato paste
1 cup chicken broth
2 tsp. Worcestershire sauce
2 tsps. fresh mined rosemary
1 tsp. fresh chopped thyme 
1/2 cup frozen peas
1/2 cup frozen corn 

Peal and cut potatoes into small 1 inch chunks.  Place in a large pot, cover with cold water, cover and bring to a boil.  Salt the water once it's boiling, remove the lid, and turn the heat down and let the potatoes cook for 15 - 20 minutes or until soft when pricked with a fork. 

Drain water off of potatoes in a colander and return to the pot.  In a separate container, microwave half and half with butter and mix together. Then add the mixture to the smash potatoes.  Add salt and pepper.  Stir in the egg yolk until well combined.  

Preheat oven 400 degrees. 

In a large cast iron pan, heat canola oil.  Add onions and carrots and saute for 3 - 4 minutes.  Add the garlic and stir to combine.  Now add the ground beef, salt, and pepper and let cook until brown and cooked through.  Sprinkle the meat with flour and toss to coat.  Continue cooking for another minute.  Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme and stir to combine.  Bring to a boil, then lower heat and simmer 10 minutes to let it thicken.  Add the corn and peas to the meat mixture.  Top with mashed potatoes starting around the edges to create a seal so the mixture doesn't bubble up while cooking in the oven.  

I took a spoon and created texture on the top of the potatoes.  Then I sprinkled with a little paprika to give it some color.  I also added a little sharp cheddar cheese on half of the pie.  My FBP doesn't eat cheese, and honestly you don't have to add it.  I was just experimenting.  It's great without it too!  

Bake 400 degrees for 25 minutes or until the potatoes begin to brown on the top.  Remove and let cool 15 minutes.  

I sprinkled fresh parsley on the top for color.

Buffalo Chicken Beer Cheese Dip



Ok seriously?  There is NOTHING about this that doesn't sound 100 percent "Get In My Tummy Right Now" yummalicious!   

You know me, I'm always cruising all over Pinterest and today this made me stop right in my tracks!  Look at it!  That ooey....gooey yummalicousness makes me wanna dip a big piece of bread into it!

Buffalo Chicken Beer Cheese Dip 


Ingredients

  • 2 tbs olive oil
  • 3 boneless skinless chicken thighs, cut into small pieces
  • 8 oz sour cream
  • 16 oz cream cheese, softened
  • 3/4 cup Parmesan
  • 3/4 cup Mozzarella, plus ½ cup mozzarella for top
  • 1/3 cup Franks Red Hot Sauce
  • 2/3 cup IPA beer
  • 1 tsp garlic powder
  • 2 tbs cornstarch
  • ½ cup blue cheese crumbles
  •  

Directions

  • Preheat oven to 350
  • Heat the olive oil in a large pan over medium high heat, add the chicken and cook until browned, about 5 minutes.
  • In a food processor, add the sour cream, cream cheese, Parmesan, 3/4 cup mozzarella, Franks Red Hot, beer, garlic powder and cornstarch, process until well combined, about 5 minutes.
  • Pour into an oven safe dish. Stir in chicken pieces, sprinkle with remaining mozzarella.
  • Bake until warm and cheese is bubbly, about 15 minutes.
  • Remove from oven, sprinkle with blue cheese and serve warm with chips.

Olive Tapenade Stuffed Greek Pork Loin



You can take a little help from the grocery and still make a healthy meal for your family.  For instance, I found olive tapenade at Trader Joes.  It was the LAST container on the shelf, so I knew I had stumbled onto something yummy!  Then I found a pork loin, and it was on the cheap!  

Yaaaay!  

My brain started working overtime trying to figure out a way to work these two yummy ingredients together.  So I decided to butterfly the pork loin twice making it almost like a sheet of paper, then stuffing it with the olive tapenade.  I whipped together a Greek herb rub, and I coated the outside and let it sit for a few hours in the fridge while I ran some errands.  
This is so simple, and if you want you can make your own tapenade.  

This dish has a real "wow" factor!  My fiance couldn't tell me enough how much he loved this dish!  Wanna impress someone?  Whip up this yumma-fancy meal! 

Olive Tapenade Stuff Greek Pork Loin 

1 lb. pork loin 
1 - 2 cups of olive tapenade 

Greek seasoning 

1/2 tbsp. oregano
1/2 tbsp. thyme
1/2 tbsp. basil
1/2 tbsp. garlic powder
1/2 tbsp. onion powder
1 tsp. salt
1 tsp. pepper 

Butterfly the pork tenderlion by slicing in half, but not all the way through the meat.  Then slice through the ends that you just made and cut through until you almost reach the end of the meat.  Don't cut all the way through.  

Here is a tutorial if you are unclear about how to do this.  It's really easy, so don't be nervous!  





Now the pork loin should look like a flat sheet of paper.  Spoon the tapenade onto the meat.  Then roll the meat up like you would a burrito, making sure the mixture doesn't spill out.  

At this point, I realized I didn't have any kitchen twine.  BUT, I did have dental floss!  YES, YOU CAN USE DENTAL FLOSS to tie up the meat.  Just make sure it's not flavored!  

Tie up the pork loin in three different places.  

Because the tapenade has so much oil in it, it will be leaking out of the insde of the meat.  At this point, I just rolled the meat around in the oil.  Then, coat the outside of the meat with the Greek seasoning mixture.  

Put in the fridge and let sit for a few hours.  

Heat the grill on medium heat.  

Grill pork loin 16-20 minutes rotating a quarter turn every 2 minutes until the internal temperature is 150 degrees.  The pork will still be pink when it is done.  

I served this with saffron rice and roasted baby broccoli.  My fiance ate everything on his plate, and couldn't stop telling me how much he loved this meal!  It's a real crowd pleaser!

Super Easy Cream Cheese Pumpkin Pie



This recipe is so easy!  No really, you should grab your kids and get them to help you make this! OR, make it for someone special and pretend it took you ALL day!  Rub a little cream cheese on your cheek when you see them... maybe they will smooch it off!  ;)

Cream Cheese Pumpkin Pie

Ingredients
  • 1- 8 oz. package cream cheese (softened)
  • 1- 16 oz. container Cool Whip
  • 1- 15 oz can pumpkin
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 1 tsp vanilla
  • ½ cup brown sugar
  • ½ cup powdered sugar
  • 2- 9″ graham cracker pie crusts
  • Ready Whip/Cool Whip (for serving)
  • Cinnamon (to sprinkle on top)
  • Chopped Pecans (for serving-optional)
  • Yields 2 pies.
 

 

Instructions
  1. In a large bowl, combine pumpkin, cream cheese, pumpkin pie spice, & cinnamon. Mix well.
  2. Add in large container of Cool Whip. Then add vanilla, brown sugar, & powdered sugar. Continue to mix ingredients thoroughly.
  3. Spoon mixture into pie shells. Cover & refrigerate for 1 hour.
  4. Top pie with Cool Whip/Ready Whip for serving. Sprinkle with cinnamon & chopped pecans if desired.

Luke Bryan's Wife Trashes Wedding Dress



When asked why she decided to trash her wedding dress Caroline Bryan says, "just for the hell of it"!   Caroline is with her friends Cara Owen (daughter-in-law of Alabama's Randy Owen) and Tiffany Fallon (the wife of Rascal Flatts' Joe Don Rooney).  They are trashing her wedding dress...Southern Style!  And they are having a blast doing it!

These photos were taken on Luke Bryan's farm just south of Nashville.

 


Now before you ladies start thinking Caroline is going this because there might be troubles at home, that's not the case!  (DANG IT!!!)  ;)-  Luke and Caroline have been happily married since 2007.  



This looks like so much fun!  



Of course I'm like, "give me those booooooots"!  HA!  



Luke Bryan's wife is such a lucky lady, AND she's so beautiful!

Spinach Feta Muffins



These look so fancy, but they are actually very easy to make (at least what I can tell from the recipe).  I found this on Pinterest, and the creator uses herb cream cheese and milk to get that luxurious topping on the muffin.  Don't you just want to bite right into this thing?!!

I've made those savory muffins before with Sausages , Today I decided to try the same recipe with Spinach and Feta cheese ,they were unbelievably delicious!! Frosting them with herbal cream cheese was also an amazing idea, they looked really elegant & tempting! I really recommend those muffins for breakfast of brunch ! They are just the perfect choice & my kids loved them too!
 
 

Ingredients: (12)


2 cups of Flour (300 gm)
1 Teaspoon Baking powder
1 Cup Milk
1/2 cup Oil
2 Eggs
2 Teaspoons sugar
1 Teaspoon Salt
250 gm Frozen Spinach
100 gm Feta cheese

For the Frosting:
200 gm Herbal cream cheese
4 Tablespoons Milk

Preparation:

Preheat your over to 180°C
Prepare your Muffin tin by placing 12 cupcake liners.
Leave Spinach to thaw and place it in a sieve and  press very well with your fingers to drain any remaining water.
Cut Feta into small cubes.
In a mixing bowl, add All ingredients (without Spinach and Feta) and mix well with an electrical mixer till smooth.
Add the Spinach and Feta then mix with a spoon.
divide the batter into the 12 muffin liners and enter the oven for around 20-25 minutes.

For the Frosting:
Mix cream cheese with milk very well till smooth.
Add in a piping bag with a star tip.
Pipe some stars over your muffins & decorate with Parsley.

White Chicken Chili with Roasted Peppers



On Sundays I love watching the Seahawks and cooking something really special for me and my fiance.  I came up with this White Chicken Chili recipe, and while you can simplify it by using beans out of the can and canned chilies, I wanted to do everything from scratch!  So if you have a Sunday afternoon or some extra time one day, this is a recipe that will make your family luuuuuuurve you even more than they do now!  




White  Chicken Chili 

2 chicken breasts on the bone (or whole chicken) whatever you like best
1 lb. Great White Northern beans 
1 onion
4 cloves garlic
2 Anaheim peppers
2 poblano peppers
2 jalapeno peppers
6 cups water 
8 cups chicken LOW SODIUM stock
1 cup milk 
2 tbsp. masa (you can use corn flour...i used corn muffin mix)
1 tbsp. cumin
1 tsp. coriander 
fresh cilantro garnish
fresh lime to spritz 
Monterrey Jack cheese for topping 
Warm corn tortillas for dipping 

Sort beans for rocks, rinse, then soak overnight.  OR, I soaked them in hot water while I cooked the chicken.  

Preheat oven to 450 degrees. 

Sprinkle salt and pepper on the chicken.  In a large dutch oven on medium-high heat, brown the chicken pieces on both sides.  You are not cooking the chicken, just getting a nice color on it.  Once the chicken is brown, remove it from the pan.  

Add 6 cups of water to the pot and scrape up the chicken bits from the bottom of the pan.  Bring to a boil, add the browned chicken, lower the heat to a simmer, and cover with a lid.  Let simmer 20 minutes. 



Meanwhile, put all the peppers on a baking sheet and sprinkle with salt, pepper, and olive oil.  Roast about 20 minutes or until peppers begin to turn black.  Remove from the oven and let cool.  When the peppers are cool enough to touch, prick with a fork and remove the outer layer of skin from all the peppers.  Then chop all the peppers.  

Remove the chicken and set aside.  Pour the broth into a bowl.  

In the same dutch oven, add chopped onion and saute for a few minutes.  Add the roasted peppers and garlic.  Add the cumin and coriander and stir quickly around the pan.  Pour the reserved broth back into the dutch oven over the onions and peppers.  Add the rinsed beans.  Add 6 - 8 cups of chicken broth.  (I used close 2 boxes of chicken stock.  Keep an eye on the beans.  They soak up a ton of liquid, and you may have to add more stock during the cooking process.)  Let the beans come to a boil, put a lid on the dutch oven, and turn the heat down to a simmer.  

The beans will need to cook 2 hours or until soft.  

While the beans are cooking, remove the skin from the chicken.  With two forks, shred the chicken finely.  

When the beans are tender, add the chicken back to the pot.  Mix together the milk and masa in a cup, then add to the chili.  Let this cook for another 10 minutes.  This will thicken up the chili.  

Serve the chili with warm tortillas and top with fresh cilantro, Monterrey Jack cheese, and a spritz of fresh lime juice!

Luke Bryan Opens Up About Siblings' Deaths



Ok I joke about spending hours googling pictures of Luke Bryan, but I had no idea that his family went through such a horrible tragedy.  And it's one that almost kept Luke Bryan from moving to Nashville to pursue his music dreams.  

Pick up the latest People Country magazine, and the entire story is inside. This is what I found from CMT.  Story below...

This is one of those love/hate stories. You will love the cover story on Luke Bryan in People magazine's special country issue but hate hearing about the tragedy that his family went through early in his career.

Bryan hasn't always talked so openly about the very untimely deaths of his brother and sister. He has always tried to maintain a positive attitude and focus on the good in life. But this time, he gave the magazine details about what had to be the saddest years for his entire family.

In November 1996, Bryan was five days away from moving to Nashville to pursue his country music dreams. But his older brother Chris, 26, was killed in a car accident. So Bryan put his music plans on the backburner.

"I was never convinced I'd get back to Nashville, but I didn't spend time on 'Should I go or should I not?'' Bryan said. "It was just 'Not going.' Your mother had just lost a child. At that point, her youngest son was not going to leave the house. Chris' dying got me a little more mature."

Bryan eventually started working for his dad's business after college, but he was miserable and his dad encouraged him to head to Nashville in 2001. Bryan did and landed both a publishing deal and a record deal. He started making his debut album I'll Stay Me, but then tragedy struck again when his sister Kelly, 39, collapsed and died at home.

"She was home with her 3-year-old, and it was like someone turned the lights out. They never determined what happened. The autopsies, the coroner, no one could figure it out," Bryan said of her death, which he called "abnormally tragic."

He says he questioned God, but now he's at peace.

"I don't like it," he said. "I don't like that my sons are missing that side of my family. But someone else is deciding things."
