Rosemary Spaghetti

When I lived in Biloxi, Mississippi my friends and I would love to get together and cook big meals with each other.  Everyone would hang out in the kitchen, sip wine, and all of us would help out in some way.  One time we decided to make homemade spaghetti sauce, but we realized half way through we did not have any oregano.  So my friend Tom runs out to the garden and runs back in with a big handful of herbs and says, "let's try it with rosemary".  

Since that day I have never put oregano in my spaghetti again.  I just love the way rosemary gives it a different kind of earthy flavor!  Hopefully you will love it too!  

You might even have some of this growing in your yard!  



Rosemary Spaghetti 

1 lb. angel hair wheat pasta
1 lb. ground turkey
olive oil
1 tbsp. red pepper flake (optional, I like it a little spicy)  
1 onion
1 bell pepper
4-6 cloves garlic
3-4 stalks of rosemary 
1 bunch of fresh basil
1 bunch fresh parsley 
1 22 oz. can crushed tomatoes
1 16. oz can diced tomatoes
1 can tomato paste 
2 cups good red wine 
1/2 cup beef stock 

Salt and pepper the ground turkey.  

In a large pot add a little olive oil and brown the turkey.  Move the turkey to the side of the post, add a little more olive oil and saute the onions first. Mince the rosemary and add all of it to the pot along with the red pepper flake.  Then add the bell pepper, and finally the garlic.  I add small amount of salt as I add layers to the sauce.  

Deglaze the pan with the red wine first then add the beef stock.  I like to use beef stock when I'm cooking with turkey to give it a little more depth of flavor.

Let the sauce reduce by half.  Usually takes about 10 minutes.  

Add the crushed tomatoes, diced tomatoes, and the tomato paste.  Test for seasonings.  Usually at this point, you will not need to add much salt.  


Let the sauce cook for at least 30 minutes.

Chop the fresh parsley and basil.  You will add these at the very end when you have removed the sauce from the heat.  

Cook spaghetti according the package, drain, all a little olive oil to the pasta to keep it from sticking.  I also add a touch of salt and pepper.  

Get yourself a big ol' bowl of pasta and scoop some of the yummy rosemary sauce on top.   

Then add a little parmesan cheese!  Serve with crusty bread, and you've got an incredible yummy sketti dinner!
