Mary's Radio Recipes
Thursday's Chicken:
This is for chicken, but it's also great with Italian sausages. Saute in olive oil till soft: 1 chopped onion, 1 lb. sliced mushrooms, 2-3 cloves, chopped garlic. When the onion is soft and the 'shrooms have given off some juice, add 1 lb. boneless chicken thigh meat cut in chunks. Stir and cook until no longer pink, then add ½ big can crushed tomatoes, 1 Tb. tomato paste, 1 Tb. Italian seasoning, dash red pepper flakes, and salt and pepper to taste. Let it all simmer for a while to thicken, then serve over pasta, polenta, or rice, with freshly grated Parmesan. If you don't have good cheese don't use any - there is no earthly reason to use that scary stuff in the can. Pour a nice big glass of wine and enjoy!
Pulled Pork:
The easiest and best! Brown a 3 pound boneless pork shoulder roast in a little oil in a big pot - Dutch oven is good. Then mix together and pour over the pork: 1 c. beef stock, 1 whole chopped onion, big dash Worcestershire sauce, 1 Tb. chili powder (more or less), 1 c. good quality ketchup, 1/4c. cider vinegar, 3 Tb. brown sugar, and salt and pepper to taste. Cover the pot and cook low and slow (250 oven)8-10 hours. You can do this all day, overnight, or in your slow cooker - whatever works. When it's all falling apart and gooey and fabulous, remove it from the pan and shred with two forks. Serve on toasted Kaiser rolls with creamy coleslaw - people will love you.
Mary's Frittata:
This is a great dish for buffets, breakfast, brunch, or a light supper, as it can sit out at room temp and it'll be fine. For 4: Preheat your oven to 350. Sauté on medium heat in an ovenproof skillet in good olive oil 1 finely diced shallot or small onion, 1 small diced zucchini, and 1/2 lb. sliced mushrooms (basically you can use any combo of vegetables as long as they're in season and around the same size). Add 1/2 lb. mild bulk Italian sausage or diced pancetta and sauté till all the pink is gone. If there seems to be too much fat, you can drain off some of it here. When things look good add 6 to 8 beaten eggs - sort of slide them into the pan so you
don't mess up your vegetables and sausage too much. Let this sit for a while and don't stir it - make sure the heat isn't too high so the bottom doesn't burn. When it's about half firm, grate enough good Parmesan or Asiago on top to cover the eggs. Don't even think about any kind of funky weird canned cheese here - better to have none at all than the bad stuff. Put the whole thing into your preheated oven; it should take about another 10 minutes or so, and will be firm and a bit brown, but watch it. Let it cool some then cut into wedges; make sure you're holding the appropriate beverage in your other hand when serving.
Toasts With Chocolate and Sea Salt:
8 1/4 in. baguette slices; 8 thin 1 in. squares of best quality bittersweet chocolate; extra virgin olive oil for sprinkling; coarse sea salt for sprinkling.
1) Preheat oven to 350. Lay bread on baking sheet, lay a chocolate square on top of
each, sprinkle with a little olive oil and sea salt
2) Bake until chocolate is molten but not seeping thru bread, about 3-5 minutes. Bread
should crisp lightly but not toast. Sprinkle with a little more salt and
oil, and serve.
Love Bites:
Preheat oven to 400. BEAT: 1 c. finely grated sharp cheddar and 2 Tb. soft butter still smooth. STIR IN:1/2 c. sifted flour and a good dash of cayenne. Shape about 1 large tsp. of this dough around each large drained pimento stuffed green olive. (One jar yields about 20-25). Place on ungreased baking sheet; bake in preheated oven about 15 minutes. Serve hot.
