Grilled Steelhead Trout

I'm trying to take advantage of the beautiful fresh fish here in the Pacific Northwest.  However, in a lot of cases, I have NO idea what the fish is or how to cook it.  

So I picked up some fresh Steelhead Trout at The Metropolitan Market yesterday, and then had to come home and research how to cook it.  

Finally, I found a recipe where you grill it for 4 minutes per side.  Easy peasy!  

So I gave it a whirl, and it turned out perfect! 

Grilled Steelhead Trout

2 lemons
1 tbsp. fresh basil
1 tbsp. dijon mustard
1/2 tbsp. honey
salt and pepper
crushed red pepper

Mix all the ingredients together and let the Steelhead marinate for 5 - 10 minutes before you grill it.  

I placed a piece of tin foil on the grill, and I rubbed it down with olive oil.  

Grill fish skin side down first for 4 minutes.  Then use a large, thin spatula to flip it.  Grill it for 4 minutes on the other side.  

Serve it however you like!  

I put a Puttanesca sauce on top and whipped up some couscous and roasted brussel sprouts!
