Grilled Chicken & Goat Cheese on Basil Pesto Flatbread

I found these fresh baked basil pesto flatbreads at Central Market in Shoreline, and I got inspired to make my own pizza on the grill. 

The best part about these flatbreads...you can use your imagination!  Anything you can dream up, you can add it to your flatbread!  Do you like BBQ sauce?  How about BBQ chicken, pineapple & red onions?  Yeah, the options are limitless!  Taco flatbread?  Triple cheese?  Veggie only? 

Here's what mine looked like!  



Grilled Chicken & Goat Cheese on Basil Pesto Flatbread 

fresh flatbread 
1 chicken breast per 2 flatbreads  
2 tbsp. goat cheese 
sprinkle fresh parsley (happened to have it in the fridge)
3 or 4 grape tomatoes cut in half 
bell pepper
onion 
sprinkle parmesan cheese 

Salt and pepper chicken breast and grill 5 -6 minutes per side. Then cut into small bite size pieces.  Coat flatbread with goat cheese, or whatever cheese you love.  Then add your toppings!  Again, you are only limited by your imagination OR what's in your fridge!  

Place pizza stone on grill and let it get hot.  Then place flatbreads on grill.  Keep a close eye on them.  Midway through I sprinkled a little shredded parmesan cheese on mine.  It took around 6-10 minutes to get crispy.  

Serve with a side salad!
