Grilled Basil Pesto Chicken & Tomato Kabobs



I wish I could say I made these, but I didn't!  My FBP whipped these up for dinner last night, and they were delicious!  And from what I understand, there are easy to make.  Here's what he did...

Grilled Basil Pesto Chicken & Tomato Kabobs

1 lb. chicken cut into 1 inch pieces
1 cup basil
1 lemon
2 cloves garlic
1/4 cup pine nuts
1/4 cup olive oil 
1/4 cup parmesan cheese
salt and pepper
1 bell pepper
1 red onion
1 box grape tomatoes

wood skewers soaked in water for 5 minutes 

Blend all ingredients (except the chicken) in a food processor.  Add the pesto to a large bag with the chopped chicken pieces, and let marinate up to 5 hours in the fridge. 

Skewer chicken and alternate with veggies and tomato.  

Grill until chicken has an internal temperature of 140.  Then remove from grill and cover.  They will continue to cook and will ultimately reach 160.  Then they are ready to eat.  

Serve with some couscous!  YUM!
