Sometimes you just don't feel like cooking, and noshing on a huge salad sounds like summer in your mouth, right? Plus, it's so much easier to throw together a salad instead of getting out a bunch of pots and pans.
This is how I skipped the stove, and threw together a quick, healthy, yummy dinner last night. I had this on the table in less than 15 minutes.
1 package 6oz. pre-cooked roasted chicken breasts in strips
1 bag of pre-washed romaine hearts
1 fresh fennel bulb cored and chopped length wise
2 green apples peeled and chopped
1 cup fresh parsley
10-15 grape tomatoes cut in half
fresh feta for topping
1 - 2 tbps. Lemon dressing (your favorite store bought brand, I used Litehouse)
I took a lot of help from the store on this one. Put all ingredients in a bowl, cover with the dressing and feta cheese and enjoy!
