Burger A Day Keeps the Calories Away! Say WHAT??!!

I ate a burger AGAIN last night!  And, I'm having one for lunch!  But, I'm not suffering from the calories and fat from a  typical red meat burger.  I made this burger with fresh Albacore tuna!  Here's what I did! 



Pad Thai Albacore Tuna Burgers

4 oz. fresh Albacore tuna
zest of 1 lime
2 cloves garlic
1 inch piece fresh ginger
3 - 4 tbsp. fresh cilantro 
1/2 cup panko bread crumbs
1 egg  

Marinade: Mix separate then add 3 or 4 tbsp. to tuna mixture

1 lime juiced
1tbsp. heaping tablespoon peanut butter 
1 tbsp. fish sauce
1 tbsp. Asian rice wine vinegar 
2 tbsp. Sambol Olelek (I LIKE IT HOT- YOU CAN ADD JUST A LITTLE OR NONE) 

Mince the albacore tuna steak into very little pieces.  You can use your knife.  It only takes a minute.  DO NOT PUT INTO FOOD PROCESSOR.  It breaks it down too much.  Put into a large bowl. 

Add lime zest.  Mince the garlic and ginger together until it becomes a paste.  While chopping you can add a little kosher salt to help it break down.  Lay your knife flat and go back and forth over the garlic and ginger to further break it down.  

Add the chopped cilantro, panko bread crumbs, and egg to the bowl. 



Make the marinade! In a jar add juiced lime, peanut butter, fish sauce, rice wine vinegar, and the Sambol Olelek (you can omit this, but I love it hot)! Shakey shake!  Now add 3 or 4 tablespoons to your tuna mixture.  

If it's too dry, add more marinade.  If it's too wet and wont form into patties, add more panko.  

Form into burger patties!  



Bake at 425 for 10 minutes!  

Use some of the marinade for a dipping sauce!!  Serve with your favorite veggies, and you've got a killer burger meal without the fat or calories!!
